Ingredients
- 1 cup
- 1, diced
- 1 cup, halved
- 1/4, finely chopped
- 1 can, rinsed
- 1/2 cup, chopped
- from 1 lemon
- 3 tbsp
- to taste
Instructions
- Cook quinoa according to package directions. Let it cool.
- In a large bowl, combine cooled quinoa, cucumber, tomatoes, red onion, chickpeas, and parsley.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Serve immediately or chill for later.
