Ingredients

  • 1 cup
  • 1, diced
  • 1 cup, halved
  • 1/4, finely chopped
  • 1 can, rinsed
  • 1/2 cup, chopped
  • from 1 lemon
  • 3 tbsp
  • to taste

Instructions

  1. Cook quinoa according to package directions. Let it cool.
  2. In a large bowl, combine cooled quinoa, cucumber, tomatoes, red onion, chickpeas, and parsley.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  4. Pour dressing over the salad and toss to combine.
  5. Serve immediately or chill for later.
