After many attempts, I have perfected my chicken biryani recipe. The secret is in the saffron-infused milk and the slow-cooked onions. A true labor of love, but worth every minute. Perfect for a weekend feast!

Ingredients

  • 2 cups
  • 1 kg, cut into pieces
  • 1 cup
  • 4, thinly sliced
  • 2 tbsp
  • 3 tbsp
  • a pinch, soaked in 1/4 cup warm milk
  • 4 tbsp
  • 1/2 cup, chopped
  • 1/2 cup, chopped
  • to taste

Instructions

  1. Wash and soak the rice for 30 minutes.
  2. Marinate the chicken with yogurt, ginger-garlic paste, biryani masala, and salt for at least 1 hour.
  3. Fry the sliced onions in ghee until golden brown and crisp (birista). Set aside half.
  4. In the same pan, add the marinated chicken and cook until it's partially done.
  5. Cook the soaked rice until it's 70% done. Drain it.
  6. Layer the cooked chicken and rice in a heavy-bottomed pot. Top with fried onions, mint, coriander, and saffron milk.
  7. Cover and cook on low heat (dum) for 20-25 minutes.
  8. Let it rest for 10 minutes before serving.
