My Ultimate Chicken Biryani

After many attempts, I have perfected my chicken biryani recipe. The secret is in the saffron-infused milk and the slow-cooked onions. A true labor of love, but worth every minute. Perfect for a weekend feast!

Ingredients
- 2 cups
- 1 kg, cut into pieces
- 1 cup
- 4, thinly sliced
- 2 tbsp
- 3 tbsp
- a pinch, soaked in 1/4 cup warm milk
- 4 tbsp
- 1/2 cup, chopped
- 1/2 cup, chopped
- to taste
Instructions
- Wash and soak the rice for 30 minutes.
- Marinate the chicken with yogurt, ginger-garlic paste, biryani masala, and salt for at least 1 hour.
- Fry the sliced onions in ghee until golden brown and crisp (birista). Set aside half.
- In the same pan, add the marinated chicken and cook until it's partially done.
- Cook the soaked rice until it's 70% done. Drain it.
- Layer the cooked chicken and rice in a heavy-bottomed pot. Top with fried onions, mint, coriander, and saffron milk.
- Cover and cook on low heat (dum) for 20-25 minutes.
- Let it rest for 10 minutes before serving.
